The fruit for this wine came from two cold sites at Gumeracha in the Adelaide Hills. Bernard 95 “Chablis” clone Chardonnay was pressed directly to fine grain French Oak with zero sulphur additions to undergo a full solids barrel ferment. Post ferment the barrels were topped, sulphured, and allowed to mature for 5 months prior to racking, blending, and bottling. The wine is showing all the hallmarks of premium cool climate Chardonnay, white nectarine, lemon peel, oatmeal, and nougat aromas. A full, concentrated pallet with wonderful depth and complexity all framed with bright acidity. Drink 2023 to 2032
