300kg of fruit handpicked each morning, rigorously hand sorted then chilled overnight.Pressed as whole bunches; that 300kg fills the press; yields just enough juice for one barrel. Racked straight to barrel (including solids). Fermentation using only indigenous yeasts (lag phase5-6 days) Some lees stirring, full MLF to soften the acidity.• Oak: 225L Barriques, Dargaud et Jaegle, Bossuet.• 25% new oak• 100 cases. Bottled Feb 2020• Alcohol: 12.5%

About the wine

Tasting notes

Light gold with a beautifully perfumed and sweet nose of white florals, lemon curd, sugarmelon, white peach and lush yellow apple. It's a touch smoky too!In the mouth it's silky and fine, driven with pristine and zesty flavours of citrus, nectarine, white peach and crisp apple. Subtle oak imparts vanilla and spice, while a line of minerality gives an incredible zing of texture and focus. Vibrant and elegant!

“Ballarat here. Cool and refreshing expression with tingly, lemony tang under green apple and green melon fruit characters with some barely there nougat notes. Crisp edges, a little flinty minerally thing in the mix, grapefruity tang to close. A chiselled, firm and fresh chardonnay of great merit here.” 93 points
