The Gregor is an Amarone style wine. The shiraz grapes are from Hobbs vineyard, hand-picked into individual 10kg buckets and then laid out onto separate racks to dry. The drying is carried out in a purpose built, fully insulated shed complete with high intensity air fans. The length of drying time varies each year and is influenced by factors including the ripeness of the grape, the ambient heat and humidity and the flavour on tasting. The drying process intensifies the flavour without losing the natural grape acids. The Baumé is increased by between 0.5° and 1.5°. After drying the grapes are fermented with their natural yeasts in open vats, hand plunged daily. Approx. 10 days. Matured for 24 months in approx. 70% new French oak; 1350L Vats and 500L Puncheons.”

Expert review

Deep colour. Intense panforte, espresso, prune, fig aromas with spicy shellac notes. Immensely concentrated wine with abundant panforte, espresso coffee and dried fruit flavours, superb chocolatey textures and underlying marzipan, spicy oak notes. Finishes cedary firm with plentiful liquorice / aniseed notes. An Appassimento / Amarone style (Made from semi-dried grapes) amplifying fruit impact and density.

The Grape

Shiraz or Syrah

Shiraz, or Syrah, is one of the most loved, rich and powerful red wine varieties made famous for its mineral and structured expressions from the Rhône in France and the rich and decadent fruity expressions from the Barossa Valley in Australia. Full bodied, rich in antioxidants and generously fruity, Shiraz sits proudly on the table for those that like their wine big and bold. Think violets, blackberries, plum, chocolate, pepper, black olive, liquorice, rosemary, tobacco and spice...i'm thirsty already!
