WINESTATE WINE OF THE YEAR 2021 AND BEST CABERNET OF THE YEAR 2021This fruit is sourced from the heart of Marananga on the renowned western ridge of the Barossa Valley, where the soils are predominantly red-brown loams over red clay, amidst shattered ironstone and quartz.The Cabernet Sauvignon was hand-picked and destemmed to a 5 tonne open top fermenter where twice daily pump overs were carried out during fermentation.At the completion of fermentation, the wine underwent post-ferment maceration (on skins) for 13 days before pressing in a basket press.The wine was matured in 67% new American oak and 33% one-year old French oak 300L hogsheads for 19 months.The wine is neither fined, nor filtered.

Tasting notes

Colour: Dark garnet core with bright scarlet red rim.Aroma: Perfumed notes of wild raspberry, blackberry, liqueur cherry and blackcurrant with Black Forest cake aromas.Palate: Flavours of blackcurrant, black plum, rare roast beef and five spice build in intensity with each sip. Dusty savoury, spicy oak tannins add texture and complexity.

Estate grown 30+ yo vines, destemmed to static fermenters, matured for 20 months in French hogsheads (70% new). Full bodied and intense, yet supple and elegant. The tannins are polished and the oak swims in the wake of blackberry, dark cherry and dark plum. The magic is the way the wine manages to convey its message with such ease. Drink to 2043.
