Harvested in early-March, it undergoes initial fermentation in open fermenters whilst being held on skins for 3 weeks and hand plunged daily. It is then transferred to French oak puncheons for malolactic fermentation and is matured for twenty two months in new, fine grained, medium toast puncheons.
