2021 Shiraz ViognierSourced from Indigo vineyards Beechworth. Elevation 480m.Vine clone is Graveyard cuttings.Soil composition is decomposed granitic sand and clay loam.Average vine age 16yrs.Grapes are hand picked and crushed directly into a open concrete fermenter with 5% Viognier and 25% whole clusters. Wild yeast fermented with hand plunging multiple times daily till fermentation has completed. Grapes remain on skins till cap fall and are then basket pressed to new (25%) and older French oak with full solids. Ruby with a purple hue and a perfumed nose of pretty florals, plum, dark berries, hints of quince, black olive and savoury, peppery and ever so slightly smoky charcuterie. There’s almost truffle-like earthiness (‘sous-bois’) sitting in the background that is captivating. In the mouth it’s finely layered, medium bodied and juicy with lush red, purple and black fruits, plum, beetroot and complex spice that holds and broadens across the palate. A swell of curvaceous pear/stonefruit-like roundness and richness swells underneath, adding body and a touch of warmth, while good natural acidity flows effortlessly, giving balance and vibrancy. It's long, seductively textured and bloody delicious!
