The fruit was sourced from a single vineyard in McLaren Vale. It's variety is a secret..... but we like to say it's Pinot Noir on the nose and Nebbiolo on the pallet.The grapes were hand picked at optimal ripeness and crushed to a single Tonnellerie Quintessence Pearle oak fermenter. The wine underwent a natural fermentation with hand plunging 3 to 5 times daily until the completion of fermentation.The wine was then pressed through a small hand basket press and filled to a single neutral French oak barrique for 10 months.The wine completed natural malolactic fermentation in barrel with no SO2 used until bottling.The wine was neither fined, nor filtered.

Colour: Light garnet core with pale rim.Aroma: Brooding dark plum, raspberry, sour cherry with passata aromas with delicate notes of allspice, green olive, freshly cut tobacco and subtle Mediterranean herbs. Palate: Ripe flavours of blackcurrant, black raspberry, redcurrant are nestled between dusty tannins with chalky acid line.A great food wine! Well suited to Mediterranean dishes, spit roasted lamb or chargrilled quail.
