Pinot Gris/ Pinot Grigio is a white grape variety thought to be mutant clone of the Pinot Noir variety. The variety has skins with a pinkish / grey hue which accounts for it name.The fruit is grown on A vineyard in Prunevale in the Hilltops region of NSW. The vineyard sits at about 600m/ asl on decomposed granite soils. The fruit is lightly pressed directly to stainless steel for fermentation and bottled young to retain freshness.
